 Creamy Leek and Potato Soup


500g Maris Piper potatoes ( peeled and cut)

200g chopped fresh leek (white + some green stalk )

200ml vegetable stock

1 tablespoon plain flour

3 tablespoon double cream

Salt and pepper

 Cut the leek into small slices. Place potatoes and leek in a pan. Add in stock. Bring to the boil.

Simmer for 30 minutes till soft. Leave to cool slightly.

Transfer the soup into a liquidizer. Add in flour and blitz for 30 seconds.

Pour the soup back into the pan and bring to the boil. Season to taste. Stir in the cream. Serve  with crusty bread.
